Weight sensor measurement by ProFilux 3.1

I would like to measure the weight of my CO2 cannister (25kg) on a daily basis so it will output a graph like the PH and the temperature. This way I can predict when it will be empty before that happens.
Apart from the complications I will face to set this up, which sensor port will be most suitable to generate a graph from the signal? I assume the level sensor will only give an on-off value unlike the PH and temperature?

Did you get this to work? I am trying to get the same setup for my co2 tank. Its always empty when i am out of town..
