Why can't change over 6.00PH ?

I can't see other options but there might be some dependency parameters that prevent that to go higher.

I am new to GHL and especially a newbie to KH Director. I have two calcium Rx ( with two ph probes of course) and would like to have Kh Director to control both Ph in both probes. Will this be possible?

This will be available in the next firmware release soon via the switchchannel functions.
